The Britain’s The Telegraph  has published a list of the 30 dishes should be able to cook by the time they are thirty, the age by which one can be expected to be working and living an independent life.

The Telegraph list is very international and contains everything from chicken curry to guacamole, as well as several Italian dishes, including spaghetti aglio, olio e peperoncino, lasagna and pesto. But, horror or horrors, it also lists “spaghetti bolognese”, when every Italian knows that ragù is only served with tagliatelle. There is another Italian dish if you include macaroni cheese. I don’t.

For anyone claiming to know how to cucinare all’italiana should check the italian version of the list below. They are almost all simple Italian classics: minestrone, dishes of pasta (carbonara) and rice (risotto with saffron), simple meats (roast chicken), oven baked fish, vegetables (tomatoes stuffed with rice) and the ubiquitous tiramisù.

In the Italian list I don’t include pizza dough, because a true pizza has to made in a pizza oven,  found in all good pizzerias but not in most homes.
